
Boil the milk with the butter & pour over the
breadcrumbs which have been mixed with 1 T. sugar.
Allow to stand for 10 mins. Then add the beaten egg yolks
& the flavouring. Pour into a greased dish & bake at 350°
for 20 – 25 minutes. When set, spread warm jam on the
top; whisk egg whites stiffly, fold in the remainder of the
sugar & pile on top of the pudding. Place in bottom of
oven for 20 minutes or more to set & brown the meringue.
Serve with a dollop of whipped cream.
